Chicken bake with cheesy mustard topping

Serves 4

Chicken portions are a great standby when one is looking for a quick meal solution. Prepared in this way, they look golden and appetizing and taste delicious.

4-6 chicken breasts or skinless thighs
Ina Paarman’s Chicken Spice
1 x Ina Paarman’s Mustard Ready to Serve Sauce
1 x egg
½ cup (125 ml) grated cheddar cheese
½ t (2,5 ml) Ina Paarman’s Cajun Spice

Preheat the oven to 180°C. Season the fillets on both sides with Chicken Spice and lay into a smallish buttered ovenproof dish to fit snugly in a single layer – best side up.
In a biggish glass measuring cup or small mixing bowl beat together the Mustard Sauce, egg and grated cheese. Pour over the chicken. Sprinkle with a little Cajun Spice for colour. Bake breasts for 25-30 minutes and thighs for 40-45 minutes until golden brown.
Serve with pasta, bread or potatoes and a tomato salad spiked with pepperdews and flecked with sliced spring onions. Dress the salad with our Herb Dressing.
I always let chicken breasts stand for 5-10 minutes after baking to complete the cooking in a gentle natural way.
