Fruit Chutney Chicken and Apricot Curry

Dried apricots give this chicken curry dish extra fruity flavour.
Serves 4 | Preparation Time: 10 mins | Cooking Time: 20 mins
• 1 x 251 g box Knorr Mince Mate Fruity Chutney Curry
• 100 g dried apricots
• 1 onion, chopped
• 15 ml oil
. 400 g chicken breast, cubed
• 800 ml hot water
• 75 ml milk

1. In a large saucepan, fry the chicken and onion in oil for 5 min
2. Add the sachet of seasoning mix, 800 ml hot water, and the uncooked pasta and bring to the boil
3. Reduce the heat and simmer for 15 min, stirring occasionally
4. Stir in the apricots and simmer for 5 min
5. Empty the contents of the topping mix sachet in a jug and add the cold milk
6. Stir until smooth, allow to stand and thicken
7. Spoon evenly onto the top of hot cooked mince
