Carrot loaf – (makes 2 loaves)

4 c flour                                        
 15 ml cinnamon
10 ml baking powder                        
5 ml ginger
10 ml bicarb of soda                       
 15 ml mixed spice
4 c coarsely  grated carrots or         
2 ml salt 
 3 c finely grated carrots             
5 ml nutmeg
1 tin (440 g) crushed pineapple        
 250 ml milk
1 ½ c sugar                                        
1 c sunflower oil
1 c chopped pecan nuts                     
 10ml vanilla essence
1.        Peel the carrots & grate them
2.       Pre-heat oven to 1180*C (350*F)
3.       Grease the loaf or cake tins well, paper with baking paper.
4.       In a large mixing bowl beat the eggs, mil and oil together.
5.       Add the grated carrots, crushed pineapple & nuts, mix well.
6.       Add the vanilla essence & sugar, mix well.
7.       Sift the dry ingredients into separate bowl.
8.       Add the flour mixture to the carrot mixture & beat well.
9.       Pour into prepared baking tin(s)
    10.   Bake for 1 – 1 ½ hours
        FREEZES WELL!!
