Bestanddele
1 heel Hoender                                                                                  
2 geelwortels in ringe gesny
3ml Swartpeper                                                                                 
500ml water
1 klein ui in ringe gesny                                                                  
5ml geuropwekker

Bestanddele Sous
125ml botter                                                                                       
125ml koekmeelblom
500ml hoenderaftreksel                                                                
125g knopiesampioene
60ml gekapte soetrissie                                                                 
1 blik ertjies
1ml peri-peri                                                                                       
5ml geuropwekker
3ml growwe swartpeper                                                               
30ml sjerrie
250ml room                                                                       

Metode
Kook die hoender met al die ander bestanddele tot sag. Verwyder die vel en bene en sny die vleis in stukkies. Hou die hoenderaftreksel waarin die hoender gekook het. Smelt die botter in ‘n kastrol wat groot genoeg vir al die bestanddele is. Roer die meelblom by en voeg die aftreksel by terwyl vinnig geroer word. Voeg al die ander bestanddele, behalwe die room, by en kook oor stadige hitte tot die groente sag is. Roer die hoender by en prut nog 10 min. Roer room net voor opdiening by.
