Cinnamon Banana Bread (makes 2 loaves)

5-8 bananas, finely mashed             
375 ml sugar
4 eggs, well beaten                          
2 ½ ml salt
125 g butter                                    
10 ml baking powder
10 ml vanilla essence                        
5 ml bicarb of soda
10 ml cinnamon                                 
5 ml mixed spice
2 ½ ml mace                                     
5 ml nutmeg
250 ml milk                                      
125 ml hot water
4 c cake flour OR 3 c cake flour
& 1 c whole wheat flour

1.        Pre-heat oven to 180*C (350*F ).
2.       Grease two loaf tins well & paper them with baking paper.
3.       Mix flour, baking powder, salt & spices together.

      (NOTE:  NOT THE BICARB!)    

4.       Cream butter & sugar in large mixing bowl.
5.       Beat the milk, vanilla essence & eggs together.
6.       Add egg mixture to the creamed butter mixture.
7.       Add the flour mixture to the creamed mixture, mix well.
8.       Dissolve the bicarb in the hot water & add to the mashed banana mixture.
9.       Add the banana mixture to the creamed mixture.
10.    Pour the mixture into the loaf tins.
11.     Bake to 1 to 1 ½ hours.
