Welsh Rarebit – 5 slices of bread

2 c grated cheddar cheese            
45 ml milk
30 ml soft bread crumbs               
10 ml cake flour
2 ml dry mustard powder               
1 egg
5 slices bread, lightly toasted        
few drops worcestershire sauce
  1. Preheat oven to 200*C (400*F)>
  2. Combine cheese & milk in a small heavy saucepan.
  3. Sir over low heat until cheese just melts, do not allow to boil.
  4. Add breadcrumbs, flour & mustard.
  5. Stir for about 3 minutes until well blended & spoon makes clean path when drawn. Across bottom of pan.
  6. Remove from heat & whisk in worcestershire sauce & egg.
  7. Season to taste.
  8. Lightly butter cooled toasted bread.
  9. Spread the mixture generously over the buttered toast.
  10. Arrange bread, touching each other, on a baking tray.
  11. Bake for 25 minutes until puffy.
  12. Or grill under grill.
