Health Rusks

(1 large baking tin)

700 g self-raising flour                
500 g muesli
400 g whole wheat four                
15 ml baking powder
half c linseed                                
10 ml salt
1 c sunflower seeds                       
half c sesame seeds
half c wheat germ                        
200 g brown sugar 
100 g sultanas                              
100 g chopped mixed nuts
100 g chopped dried apricots       
2 eggs
500 g melted butter                    
500 ml yoghurt

1.        Pre-heat oven to 180*C (350*F).
2.       Grease a large baking tray with 10cm sides.
3.       Mix up all dry ingredients in a LARGE bowl.
4.       Melt the butter.
5.       Beat eggs in another 2 litre bowl.
6.       Add the melted butter and yoghurt. Mix well together.
7.       Add mixed liquids to the dry mixed ingredients, mix well.
8.       Roll mixed dough into egg size balls & tightly pack the balls into the greased baking tray.
9.       Bake for 50-60 minutes

Break up into rusks & dry then out in a cool oven. Preferable overnight
