Herman – Canadian Friendship loaf

NB!! NEVER KEEP HERMAN IN THE FRIDGE!!

To start a Herman from scratch.
1/3  c sugar                                  1/3 c flour
½ c milk                            2 ½ ml dried yeast

1.        Mix all the ingredients together, well.
2.       If too stiff, add a little more milk.
3.       Put mixed ingredients in a container with a sealing lid.
4.       Leave in a warm place, stirring every day for about 2-3 days.

Preparation for further growing the Herman for baking later.

DAY 1 :  Stir, cover & leave
DAY 2 :  Stir, cover & leave
DAY 3 :  Stir, cover & leave
DAY 4 :  Stir, cover & leave
DAY 5 :  Put mixture into a larger container & mix in.
           1 c sugar
           1 c flour
           1 c milk
           Stir well, cover & leave
DAY 6 :  Stir, cover & leave
DAY 7 :  Stir, cover & leave
DAY 8 :  Stir, cover & leave
DAY 9 :  Stir, cover & leave
DAY 10 :  Put mixture into a large mixing bowl & mix in
            1 c sugar
            1 c flour
            1 c milk
            Stir wel1.

5.       Take out 1 cup of the mixture to grow your own next Herman &   
        1 cup for a friend (with the instructions) to grow their own
        Herman.
Baking your Herman: (List 1)
2 eggs                          5 ml cinnamon
2 ½ ml ginger                2 ½ ml salt
5 ml allspice                 10 ml vanilla essence  
250 ml oil                    2 c flour
10 ml bicarb of soda
Select ONE of the following: (list 2)
1 – 1 ½ c chopped nuts or coconut
1 – 1 ½ c grated fresh apple (2-3 medium apples, peeled) 
1 – 1 ½ c raisins or sultanas or cake mix
1 packet, copped, softened dates
1.        Pre-heat oven to 180*C (350*F).
2.     Grease 2 loaf tins well & paper them with baking paper.
3.     Add the first 9 ingredients. (list 1)
4.     Beat well until mixture is smooth.
5.     Fold in ONE of the ingredients from the next list (list2).
6.     If too still, add more milk
7.     Pour into greased, papered loaf tins
8.     Bake for 1 to ½ hour, till Hermans are done.
Enjoy Herman plain, buttered or as a pudding with custard!!
