250ml cooked pumpkin+ pinch salt
50ml melted margarine
50ml brown sugar
5ml baking powder
5ml vanilla essence
Mix cooled, cooked, mashed pumpkin (I use butternut) with the eggs and sugar. Add melted margarine and rest of ingredients and mix gently. Pour into muffin pan and sprinkle with cinnamon sugar. Bake at 200°C for about 30 minutes. Serve and enjoy.
Healthier option to the traditional pumpkin fritter.
