1kg of chicken (I like Skinless chicken pieces)
1 tin of crushed tomatoes
1 cup of mushrooms (I usually add more)
1 onion – diced
2 cloves of garlic
1 cup Kalamata olives (pitted and halved)
Juice of one lemon
Parsley – chopped
Salt & pepper to taste
Chuck everything into the slow cooker and mix well.
Serve over rice or potatoes and enjoy! I love mashed potatoes with this dish.
