Tasty Oven Baked Chicken & Rice

2kg Chicken Pieces, Cleaned
30ml Cooking Oil
Black Pepper
15ml Butter
Mixed Herbs
2 Cloves Garlic, Crushed
1 Pkt Mushroom Soup
1 Green Pepper, Cut In Strips
375ml Rice, Uncooked
1 Red Pepper, Cut In Strips
250g Mushrooms, Sliced
750ml Hot Chicken Stock (Can Use More If Desired)
1 Onion, Chopped
Preheat Oven To 180°C & Spray A Deep Ovenproof Dish With Cook ʼn
Heat The Oil & Butter Until Hot.
Mix The Salt, Black Pepper & Mixed Herbs Together & Sprinkle Over The
Chicken Pieces.
Brown The Chicken Pieces In The Oil & Butter Mixture, Take Out & Keep
One Side.
Brown The Onion, Garlic, Peppers & Mushroom Slices In The Remaining
Pan Fat For 2 Mins.  (If Necessary, Add Extra Oil) Add Rice & Brown For A Further 2 Mins.
Mix The Mushroom Powder With A Bit Of Cold Water & Beat In The
Chicken Stock.
Dish The Rice Mixture & Chicken Pieces In The Prepared Oven Dish & Pour The Mushroom Soup/Chicken Stock Over.
Stir Lightly Through, Cover With Foil & Bake In The Preheated Oven For
± 80 Mins Until The Chicken & Rice Is Cooked. Enhance The Flavour Further If Necessary.
Stir In A Handful Of Freshly Chopped Parsley Before Serving. Serve With Vegetables Of Your Choice.
