Apricot & Honey Chicken

12-14 Chicken Pieces, Cleaned
1 Large Onion, Sliced Into Rings
250g Dried Apricots
250ml Honey
500ml (2 Cups) Hot Chicken Stock
250ml Lemon Juice
Cake Flour Seasoned With Salt & Pepper To Taste
1 Pkt (100g) Mixed Nuts (Optional)
Few Fresh Mint Leaves
Soak The Apricots In The Chicken Stock. Roll Each Of The Chicken Pieces In The Seasoned Cake Flour & Fry In Heated Oil Until Golden Brown. Remove From The Pan.  Fry The Onion In The Pan Fat Until Tender. Return The Chicken Pieces To The Pan.  Blend The Honey,
Lemon Juice & Apricot Mixture. Add To The Chicken, Reduce The Heat &
Simmer Until The Chicken Is Tender & Done. Add The Nuts Just Before The End Of The Cooking Time & Heat Until Warmed Through. Sprinkle With Mint Leaves.
