1 quantity Basic Pizza Dough
30 ml olive oil
500 g tomatoes, peeled and chopped
200 g sliced/diced cheese, salt and freshly ground bl.pepper
When dough has risen, flatten it down lightly with a rolling pin and place it on a well oiled baking sheet. Shape pizza into desired shape and roll out not thicker than 5 mm. Make sure the outer edges are slightly thicker than in the middle. Brush dough with a little olive oil. Spoon a layer ‑ not too thick ‑ of tomato over base of pizza. Follow with cheese, salt and pepper or whatever the recipe requires. Finally drizzle remaining olive oil over filling. Place in preheated very hot oven (240ºC) for about 20 ‑ 30 min for large pizzas and 15‑20 min for smaller pizzas. Serve immediately, otherwise the pizza will toughen as it cools.
Garlic, olive oil and tomatoes:
1 x 410 g can tomatoes, drained and chopped
15 ml chopped parsley 2‑4 cloves garlic, chopped
100 ml olive oil salt and pepper
500 g fresh mushrooms, slivered
2‑4 cloves garlic, peeled 100 ml olive oil
2‑3 sprigs parsley, chopped salt
Saute mushrooms and garlic in a little of the oil. Discard the garlic cloves and add parsley, salt and pepper to taste. Spread this mixture over the pizza dough, sprinkle with a little pepper, drizzle remaining olive oil over and bake as directed for basic pizza. Serves 4‑6.
