Basic tomato sauce for pizzas

1 onion, chopped; 
1 small carrot, finely chopped; 
half a stick celery, finely chopped; 
30 ml olive/cooking oil; 
1kg ripe tomatoes, skinned and chopped or 2 x 410 g cans tomatoes, chopped; 
2 cloves garlic, chopped; 
15 ml fresh basil or 5 ml dried; 
1 bay leaf;  5 ml sugar; 
30 ml tomato paste; 
5 ml salt;  freshly ground black pepper

Saute onion, carrot and celery in heated oil until transparent.  Add remaining ingredients and simmer, uncovered for 45 min ‑ 1 hour or until the sauce is thick.  Remove the bay leaf.  Makes about 500 ml.
