Baked Hake Tomato, Olives & Capers

Since hake is the flavour everyone’s hankering after right now, we thought we’d give you a fabulously fresh new recipe to spoil your loved ones. Just remember to start this recipe the night before you want to serve it.

Ingredients
4 hake fillets, fresh if possible

olive oil

fish rub, your favourite one

1 1/2 cups cherry tomatoes, quartered

1/2 cup olives, chopped

1/4 cup red onion, finely chopped

1 tbsp garlic, minced

2 tbsp capers

2 tbsp fresh parsley, finely chopped 

1/2 tsp cayenne pepper
1 tbsp olive oil

salt and fresh-ground black pepper to taste


Method
Step 1
If using frozen fish, thaw overnight in the refrigerator.
Step 2
When you’re ready to cook, preheat oven to 200° C.  Pat the fish dry with paper towels.  Rub on both sides with olive oil and sprinkle with a generous amount of fish rub. 
Step 3
Put the fish into a roasting pan that you’ve sprayed with olive oil or non-stick spray and let it come to room temperature.
Step 4
Chop tomatoes into quarters and coarsely chop olives.  Finely chop red onion and parsley.   Mince the garlic.
Step 5
Combine tomatoes, olives, red onion, garlic, capers, cayenne pepper, olive oil, salt, and pepper to make a salsa, and spoon over the fish.
Step 6
Bake about 15 minutes, or until the fish is firm and flakes easily with a fork. 
Step 7
Serve hot, with a generous amount of the salsa mixture spooned over each piece of fish when you dish up.
Step 8
This is good served with rice to soak up the flavourful juice.
