Chicken Satay

1 Garlic clove, minced
15ml Soy sauce
125ml Creamy peanut butter
10ml Lime, juice and zest
15ml Brown sugar
2 Chicken breasts, cubed
TT Salt
TT Pepper

How to cook
Mix the garlic and soy sauce together and fold into the creamy peanut butter. Add a little lime juice and zest and brown sugar to balance out the acidity and to add sweetness.Skewer the cubed chicken pieces and tightly arrange in a shallow dish. Pour over the peanut sauce, ensuring that the chicken skewers are well coated. Allow to marinade for 15 to 20 minutes. Remove from the peanut marinade and grill on either side until cooked through. Check seasoning and serve. Serving suggestion: Serve chicken satays with lime wedges, chilli dipping sauce and McCain American Fries.
