Mutton & Carrot Curry

Shopping list

500 gr Mutton, Bone In, Cubed
15 ml Meat Seasoning
30 ml Vegetable Oil
100 gr McCain Diced Onions
5 ml Garlic, Crushed
100 gr McCain Diced Peppers
10 ml Curry Powder
2 Tomatoes, chopped
250 ml Beef Stock
250 ml Minestrone Soup
5 ml Mixed Herbs
2 Potatoes, Peeled and Cubed
125 ml McCain Carrots Julienne
To Taste Salt
To Taste Pepper

How to cook
Season the mutton with the meat seasoning. In a pot, heat oil and brown seasoned mutton on all sides, remove from the pot and set aside.Fry the McCain Diced Onions, McCain Diced Peppers and garlic in the same pot until soft. Add the curry powder and tomato and fry for 2 minutes. Add the stock, soup, herbs and mutton and bring to the boil. Reduce the heat and allow to simmer for 60 minutes with the lid on. Add the potatoes and simmer for a further 30 minutes. When the meat and potatoes are cooked add McCain Carrots Julienne and cook for another 5 minutes. Season with salt and pepper. Serve with rice.
