Traditional Boerewors


2 Kg beef (70/30 meat to fat ratio)
1 Kg pork (70/30 meat to fat ratio)
200 ml cold water
3 g ground black pepper
7 g ground cloves
30 g roasted coriander seeds
5 g nutmeg
55 g salt

Mix everything together and let it rest for 30 minutes. Ground coarsely
Stuff meat  lightly into casings.
