1 fillet of hake or other white fish, cut into 4 portions
vegetable oil for deep-frying
1 C (250 ml) flour
¼ C (60 ml) cornflour
2 tsp (10 ml) baking powder
about 1 C (250 ml) beer
salt and freshly milled pepper
Whisk the flour, corn flour, baking powder, beer and seasoning together until smooth. Keep to one side for at least 30 minutes.
Heat a pot of oil. Coat each portion of fish with seasoned flour and dip into the batter, coating well. Gently submerge into the hot oil and deep-fry until golden (a maximum of 6 minutes). Place on paper towels to absorb excess oil and serve immediately with fried chips and Garlic and Herb Mayo.
To make a Garlic and Herb Mayo:
Mix ½ C (125 ml) mayonnaise with ½ tsp (2.5 ml) crushed garlic and 1Tbsp (15 ml) chopped parsley.
