CHEESE AND MOCHACHOS EGGS

Add butter to a pan and gently sauté some chopped onion.
The onion must not brown, but become slightly translucent.
To this add 1 tablespoon of Mochachos hot sauce and a little bit of chopped green chillie.

Crack 2 eggs in and add salt.
Add about 2tbls of very small cubed mozarella (scatter).
Grind black pepper over, and sprinkle coriander.
Serve on top of buttered toast.
