Hearty salsa Serves 8 as a side dish

1 cup cooked kidney beans (canned is fine)
1 mango, peeled, seeded and diced
1 avocado, diced
2 large tomatoes, diced
1 capsicum diced
¼ – ½ cup red onion, finely diced
(or 2 spring onions)
1 cup cooked corn
½ cup chopped fresh coriander
3 cloves garlic, crushed
3 Tbsp fresh lime or lemon juice
1 Tbsp oil
1 chilli, seeded and sliced

Mix all the ingredients together and chill before serving.
