Malva Pudding

30ml Clover Butter
200ml sugar
1 egg
375ml cake flour
250ml Clover Milk
15ml apricot jam
a pinch of salt
5ml bicarbonate of soda, dissolved in 15ml vinegar

250ml Clover Pouring Cream
200ml sugar
125ml Clover Butter
250ml water
15ml brandy (optional)

Preheat oven to 180°C and grease an ovenproof dish. Cream together butter and sugar. Beat in egg, and slowly beat in flour and milk. Lastly, beat in jam, salt and bicarbonate of soda. Pour into prepared dish and bake for 30 to 45 minutes until golden brown and cooked through. In the meantime: In a small saucepan melt the first four sauce ingredients, and simmer together. Remove from the heat and stir in the brandy (if used). Pour hot sauce over the pudding after baking time is completed. Serve warm.
