1kg smoked pork rib racks
100ml lime juice
5ml ground ginger
With a sharp knife, cut the pork rack into individual ribs. Pour the honey, lime juice and water into a large saucepan. Add the ground ginger and stir.
Add the pork ribs and cook over high heat until most of the moisture evaporates and the ribs are heated through. As the mixture reduces, it covers the ribs in a delicious sticky coating.
Serve with mash or potato wedges and a fresh mixed salad.
