SPINACH & CORN SAVOURY TART

Ingredients
15 ml sunflower oil,
1 onion, chopped,
2 rashers bacon, chopped,
2 cups washed and chopped spinach,
1 packet thick vegetable soup,
375 ml milk,
4 eggs,
5 ml mustard powder,
250 ml cheddar cheese, grated,
1 can whole kernel corn, drained.

Method
Heat oil and saute onion and bacon. Add spinach and fry until soft. In a large bowl, mix together soup powder, milk, mustard, eggs and 125 ml cheese. Add spinach mixture and corn and pour into a greased 25 cm flan dish. Top with remaining cheese and bake at 190*C for 35 minutes.
