MARSHMALLOW FUDGE BROWNIES AND ICING

Ingredients
125 ml margarien,
190 ml sugar,
2 eggs, beaten,
190 ml flour sifted,
2 ml baking powder,
25 ml cocoa,
2 ml salt,
5 ml vanilla essence,
125 ml chopped nuts,
18 marshmallow halves.

Method
Cream butter and sugar., add eggs.  Beat well, sift dry ingredients, add to creamed mixture.  Mix well, add vanilla essence and nuts. Bake in 30 cm x 20 cm tin for 20 minutes (180*C).  Take from oven and put marshmallow halves on top.  Return to oven for 3 minutes.  Spread until top is covered with marshmallow.  Cool, then frost with icing.

ICING

Ingredients
125 ml brown sugar,
65 ml water,
1 square unsweetened chocolate,
37,5 ml margarine,
5 ml vanilla,
35 ml icing sugar.

Method
Combine brown sugar, water and chocolate, boil for 3 minutes.  Add butter and vanilla essence and let cool.  Stir in icing sugar.  Spread on brownies.  Cut into squares.
