Ingredients
1 kg ripe figs, peeled and halved,
180 ml water,
45 ml lemon juice,
940 ml sugar,
15 ml peeled and grated fresh ginger.

Method
Place figs, water and lemon juice in a large heat-resistant bowl, microwave on High, 10 – 12 minutes, stirring frequently. Add sugar and ginger, stir until sugar has dissolved. Microwave on High 15 – 20 minutes or until setting point is reached. Allow to cool slightly, then fill hot, dry, sterilised jars. Makes 2 x 750g jars.
