MUTTON AND POTATO STEW (4 – 6 portions)

1 tablespoon cooking oil,
1 tablespoon curry powder,
500 g mutton stewing pieces,
2 potatoes peeled and cubed,
2 carrots peeled and chopped,
1 mutton stock cube,
1 onion, chopped,
2 tomatoes chopped,
1 cup water,
2 tablespoons mutton flavour soup mixed with 4 tablespoons water.

Heat oil in a pan and fry onion until soft. Add curry powder and tomatoes and fry for a further 2 minutes. Add mutton pieces and fry until well browned. Add potatoes , carrots, water and stock cube, stir well and bring to the boil. Tun down the heat and allow to simmer with lid on for about 4 min. until meat is tender, stirring occasionally. Just before serving add soup mixed with water to the pan. Allow to simmer fir a further 5 minutes to thicken.
