Souskluitjies (Cinnamon dumplings)

Not everyone is familiar with Souskluitjies (Cinnamon dumplings). This recipe is so easy and will be a treat for a light supper.

Serves 4

250 ml (140 g) Snowflake Cake Wheat Flour 10 ml Snowflake baking powder
2 ml salt
60 g butter or margarine 1 extra-large egg
100 ml milk
500 ml water
about 15 ml cinnamon sugar for sprinkling

Sift flour, baking powder and salt Rub in half the butter with fingertips until mixture resembles fine breadcrumbs.
Whisk egg and milk Add to dry ingredi- ents and cut in with a knife. Knead lightly to a soft dough. Add extra milk, if necessary.
Heat water and remaining butter in a medium, heavy-based saucepan and bring to the boil. Drop heaped tablespoonsful of dough into boiling water. Cover and boil for about 15 minutes.
Do not remove lid while boiling.
Remove dumplings with a slotted spoon and place in serving Sprinkle with cinnamon sugar.
Bring water in which dumplings were cooked to the boil Add more cinnamon sugar, if preferred, and pour over dumplings. Add more water, if required.
