4 chicken breasts, skinless & butterflied
2 spring onion, sliced
baby gem lettuce, rinsed and separated
1 avocado, sliced, for garnishing
Rub chicken fillets with a little salt and dry char grill on a ridged pan until cooked through.
Leave to rest, then slice and arrange on tortillas, along with dollops of mayonnaise, chopped spring onion, baby gem lettuce leaves and sliced avocado. Roll up and serve with a squeeze of lime juice.
