Ingredients
35 ml lemon juice
425 ml sliced bananas
6 cooked sweet potatoes cubed
60 ml brown sugar
5 ml salt
37,5 ml butter
60 ml boiling water.
METHOD
Preheat oven (180°C). Pour lemon juice over banana slices. Grease a casserole dish with butter and arrange alternate layers of sweet potato and banana. Sprinkle with brown sugar, season with salt and dot with butter. Top with a layer of sweet potato, pour over boiling water and bake for 35 minutes.
