Cottage Pie Potatoes

Ingredients
1 onion, finely chopped
250g beef mince
1 tsp dried mixed herbs
400g tin chopped tomatoes
1 beef stock cube
2 large baking potatoes around 325g, washed well
50g Cheddar, grated
20g butter
salt and freshly ground black pepper

Method
Cook the onion, beef and herbs in a large saucepan over a medium heat for 4 minutes, stirring with a wooden spoon to break up the meat. Add the tomatoes, crumble in the stock cube, then refill the tomato can with cold water and pour into the pan. Season with salt and pepper, reduce the heat slightly and cook for 20–25 minutes, stirring regularly, until the meat is tender and the sauce is thick.

Meanwhile, prick the potatoes a couple of times with a fork and place on a microwavable plate. Cook the potatoes in the microwave on high for 10–12 minutes, then carefully turn over and cook for a further 4–5 minutes, or until soft. Check by poking a skewer or knife through the center. Leave to stand until cool enough to handle.

Cut the potatoes in half and use a spoon to scoop out the insides into a bowl. Mix the potato flesh with half the cheese and butter, season with salt and pepper and set aside.

Put the potato skins, cut side up, in a microwaveable flameproof baking dish.

Spoon half the cooked mince into the potatoes. (Freeze the rest or chill and eat the next day with pasta or on toast.) Top with the mashed potatoes and sprinkle with the remaining cheese.

Cook on high again in the microwave for 3–4 minutes, or until the cheese is melted and the mince and potatoes are hot. For a crispy topping, place under a preheated hot grill for 2–3 minutes, or until golden-brown.

Cheesy Mashed Potato Casserole

Ingredients
  • 8-10 large potatoes, peeled and cut into cubes
  • 4 ounces (1/2 package) Cream Cheese
  • ½ cup Country Crock spread
  • ¼ cup milk
  • 2 cups Sharp Cheddar Cheese, grated
  • ½ teaspoon salt
  • ½ teaspoon seasoned salt
Instructions
  1. Boil potatoes until fork tender
  2. Mash until smooth
  3. Add Country Crock spread, cream cheese, milk, salt and seasoned salt
  4. Beat with electric mixer until smooth
  5. Stir in cheddar cheese, reserving ¼ cup to sprinkle on top
  6. Spread into a glass baking pan
  7. Sprinkle with cheese
  8. Bake at 350 degrees for about 20 minutes or until cheese is melted and bubbling

Ek neem gewoontlik sommer 2 tot 3 koppies gekerfde mint ‘n halwe koppie suiker, ‘n knippie sout en kook dit in omtrent 3 koppies water tot goed sag maar moet nie “dood”kook nie. Dan haal ek dit van die stoof af (of self gouer in die mikrogolf) laat effe afkoel, en voeg dan 1 koevertjie (15ml) gelitien by. Roer goed deur en bottel!! Siedaar mintjelly!!!

Dis ook heerlik om te trek soos ‘n tee, suiker na smaak by te voeg en in die yskas te bêre vir ‘n heerlike verfrissende somer drankie basis. Daarby kan jy appelstukke voeg, kersies ingooi, ystee maak, ens daar is geweldig baie om te doen daarmee.

Ook is dit baie oulik veral nou met Kerstyd om die mintblare in ysbakkies met water te voeg en te vries vir dekorasie saam met jou pons of enige ander drankies, dit lyk baie mooi en proe vars. Mint vries ook net so in ‘n sakkie in die vrieskas baie suksesvol.

Maak n heerlike verfrissende drankie en baiegesond met die mint blare – Groot komkommer , mint – klein bietjie suiker as jy wil. Pulp en gooi water by. Diep op met lekker ys. Lyk mooi en is baie lekker. Vervang komkommer met papaja of waterlemoen / spanspek.

Vir mint in tuin help vir miere en muskiete. Daar is resepte wat jy mint kan gebruik. Jy kan dit ook laat droog word en gebruik in sekere kosse.
