Cucumber Herb Dip

Ingredients
2 cups finely chopped or grated seeded peeled cucumber
1/2 cup finely chopped seeded tomato
1/4 cup chopped red onion
Greens of 2 green onion chopped fine
¼-1/2 cup fresh cilantro chopped fine
1 garlic clove, minced or pressed
¼ -1/2 cup sour cream (I used 1/4 cup plain kefir)
1 tsp lemon juice
1 tsp lime juice
1/4 tsp ground cumin
½ tsp sea salt
Tortilla chips

Method
Remove seeds from cucumber, chop fine, put in colander and add ¼ teaspoon salt. Let rest for 10 minutes to drain juice. Use paper towel to get excess moisture out. In a small bowl, combine the first seven ingredients. In another bowl, combine the sour cream, lemon juice, lime juice, cumin and remaining salt. Pour over cucumber mixture and toss gently to coat. Serve immediately or chill. Serve with chips or can be used to top a pita pocket, fish or chicken. Tastes similar to Tzatziki sauce, the Greek sauce used with gyros.

CHEESY DIP

This delectable cheese dip goes well with crisps, pretzels or vegetable sticks. It’s also very easy to make.

SERVES
5 people

INSTRUCTIONS
Combine the following ingredients in a saucepan:
1 cup of milk
2 tablespoons of flour
1 clove of chopped garlic (or 1 teaspoon of garlic powder)

Method
Bring the ingredients to a simmer, while whisking.
Add 400g of grated cheddar cheese. Stir until the mixture is smooth.
Stir in 1 teaspoon of mustard.
Recommended serving size: 1 batch should be plenty for a family of 4-5

2ml Tobasco

1 ml vasgemaalde swartpeper
2 knoffelhuisies gekneus
10 ml gerasperde ui
2 ml paprika
1 ml rooipeper
5 ml suiker
gekapte grasuie

Metode
Versap alles behalwe grasuie saam. Skep mengsel in mooi bakkie en garneer met gekapte grasuie.

Gooi so ½ koppie sweet chillie sous
1 tl gewone tabascosous in as jy nie ‘weov’ se tabasco het nie.
1 pot mayonaise (750 g)
1 blik kondensmelk
¼ kop “Wat eet ons Vanaand” – tabasco sous
1 tot 2 el mostert poeier
1 kop of meer melk

Metode
Meng alles saam en roer melk in tot verlangde dikte.

What Is Hoisin Sauce?

Hoisin sauce, sometimes called Chinese barbecue sauce, is a fragrant, pungent sauce used frequently in Asian vegetable stir-fries and marinades and Asian-style grilled dishes such as this grilled tofu with hoisin sauce.
Made from a combination of fermented soy, garlic, vinegar, and usually chili and sweetener, hoisin is dark in color and thick in consistency.
It has a very strong salty and slightly sweet flavor, which, if you’re not used to authentic Asian flavors, you may find slightly objectionable.

Hoisin sauce is a key ingredient in many traditional Chinese food and some Vietnamese food recipes.

What does hoisin sauce taste like?
Hoisin sauce does taste a bit like an American-style barbeuce sauce, but much saltier, richer and less sweet.
The flavor is unique.
Because the unique flavor can be overpowering, particularly if you’re new to Asian cuisine, it’s recommended that you use only a bit at a time to experiment with the flavor.
Or, dilute the flavor by adding water or oil to the hoisin sauce before using in a recipe.
Hoisin sauce is a great way to add an authentic Asian flavor and thickening color to a stir-fry or noodle dish, and it can also be used as a dipping sauce for egg rolls, spring rolls, or other vegetarian appetizers.

**Many grocery stores stock hoisin sauce. Look for it in the ethnic foods section of most grocery stores near the noodles, soy sauce and Thai curry pastes.

Hoisin Dipping Sauce

As with most dipping sauces, this tastes best if the flavors are allowed to blend for 1 hour before serving.

1 tablespoon oil (for stir-frying)
1 clove garlic (finely chopped)
1 teaspoon ginger (chopped)
6 tablespoons hoisin sauce
1 tablespoon dark soy sauce
2 tablespoons water
1/4 teaspoon salt
4 drops sesame oil
1 1/2 teaspoons chile paste (or to taste)
1 tablespoon peanuts (chopped)

Heat the oil in a wok over medium-high to high heat.
Add the garlic and ginger to the wok.
Stir-fry briefly until aromatic.
Turn the heat down to medium and stir in the other ingredients.
Heat through and remove from the stove. Cool.
Store in a sealed container in the refrigerator.
