1 koppie sampioensop (as jy “Cup a Soup” gebruik, neem twee pakkies)

Metode
Pak 10 visvingers, gevries, onder in oondvaste bak. Voeg helfte van sop by, strooi kaas oor en pak volgende laag visvingers. Bak vir ‘n uur teen 180 grade in oop bak. Voeg visspeserye aan die einde by. ‘n Ligte mengelslaai word aanbeveel.

Low-Carb Tuna Cheese Melt

Ingredients
1 serving
2 pieces of oopsie bread or other LCHF bread

Tuna Fish Salad
⅓ cup (80 ml) homemade mayonnaise or sour cream
1–2 celery stalks, thinly sliced, 60 g
¼ cup dill pickles, chopped, 30 g
1 can solid light tuna fish in olive oil, 140 g
½ teaspoon lemon juice
½ garlic clove, pressed
Salt and pepper to taste

Topping
100 g cheese, shredded
1 pinch cayenne pepper or paprika powder

Instructions
Preheat the oven to 175°C. Mix the salad ingredients well. Place the bread slices on a baking sheet with parchment paper. Spread the tuna mix on the bread and sprinkle cheese on top. Add some paprika powder or cayenne pepper. Bake in oven until the cheese has turned a nice color, about 15 minutes. For a complete meal, serve with leafy greens!

EASY CHEESY BREAD STICKS

INGREDIENTS:
1 prepared pizza crust [ready-made bread dough]
1 tbsp butter, melted
½ cup provolone cheese, shredded
1 tbsp parmesan cheese
1 tbsp dried basil
¼ tsp garlic salt

INSTRUCTIONS:
Preheat oven to 220°C. Unroll dough onto a greased cookie sheet and brush with butter. Sprinkle cheeses and spices evenly over the dough. With a pizza cutter, cut dough lengthwise into 12 long strips. Then cut those in half to make 24 strips. Do not separate strips. Bake for 10-12 min or until light golden brown. Recut along each strip and remove from cooking sheet. Serve sticks warm with hot sauce.

Fishcakes and slaw ~Diabetic Friendly

Ingredients
Fish cakes:
½ cup (125ml) brown lentils
3 PnP spring onions, finely chopped
2 tsp. (10ml) PnP garlic and ginger paste
Juice (30ml) and zest of ½ lemon
300g PnP smoked snoek, flaked
2 Tbsp. (15ml) PnP curry powder
Salt and milled pepper
Flour, for dusting
Canola oil, for frying

Slaw:
2 packets (600g) PnP Julienne Trio (shredded beetroot, carrot and butternut)
2-3 Cara or regular oranges, peeled and segmented
1 small PnP red onion, finely sliced
1 packet (20g) PnP coriander, stems removed
Lemon juice, to taste
2 Tbsp. (30ml) canola oil
1 tub (175ml) PnP low-fat plain yoghurt, for serving

METHOD
Cook lentils in lightly salted water until just tender. Drain well and allow to cool slightly. Mash lentils roughly. Mix with spring onions, garlic and ginger paste, lemon juice and zest, smoked snoek, and curry powder, and season. Shape into fishcakes and dust in flour. Shallow-fry in oil until golden and heated through. Drain on kitchen paper. Toss slaw ingredients together and dress with lemon juice and oil. Season. Serve fishcakes with slaw and yoghurt.

Koue – Gaarvleis Tert

2 koppie gaar gemaalde vleis
1 koppie koue gaar aartappel in blokkies gesny
1 blik klein heel sampioene
1 meduim ui
1 eeteel tamatiesous
1/4 tl.sout
1 eier
1 eeteel botter
gerasperde kaas
1 eeteel worcestersous
1/2 koppie melk

Metode
Dreineer sampioene maar bewaar water. Smelt botter in kastrol,voeg sampioene en fyngesnyde ui by en braai tot ligbruin oor lae hitte. Voeg vleis en aartappels by, braai vir nog 2 minute. Voeg al die bestanddele by behalwe eier, melk en kaas. Voeg sampioenwater by en laat net opkook. Skep vulsel in voorbereide kors, verkieslik aartappelkors. Klits melk en eier saam, giet bo-oor.
Sprinkel gerasperde kaas oor en sit hier en daar ‘n stukkie botter. Bak vir omtrent 20 minute in warm oond teen 220°C.

Aartappeltert – Warm

Bestanddele
4 groot gaar aartappels
1 koppie fyn spinasie
1/2 koppie gakapte sampioene
2 eiers
1/2 koppie melk
1/2 koppie room
vars pietersielie, gekap
Sout en peper na smaak
2 eetlepels parmesaankaas (opsioneel)
1 koppie gerasperde cheddarkaas

Metode
Voorverhit oond tot 180caC en smeer oondvaste tertbak. Maak aartappels fyn en ment met die spinasie en sampoiene. Klits eiers met melk en voeg by aartappelmengsel. Voeg die res van die bestanddele, behalwe die cheddarkaas, by en meng goed. Skep in tertbak, strooi cheddarkaas oor en bak vir 20 min of tot ligbruin. Skep lepels vol op borde en bedien. Kan ook as bykos by meer formele etes bedien word. Vir ‘n ligte aandete kan die spinasie deur tuna en skywe tamatie vervang word.

100 ml gerasperde Cheddarkaas
1 klein ui, fyngerasper
knippie mosterdpoeier of paprika, indien verkies
6 repies spekvleis, swoerd verwyder.

Metode:
Sny elke worsie in die helfte deur, maar moet dit nie heeltemal deursny nie. Meng kaas, ui en mosterdpoeier of paprika en skep in elke spleet van die mengsel. Draai ‘n reep spekvleis om elke worsie en pak dit op ‘n bakplaat. Rooster onder die roosterelement van die oond tot die spekvleis gaar en die kaas gesmelt is. Dien dadelik op saam met brood indien verkies.

800g gaar oorskiet-hoender, in stukkies gesny
2 nektariens, ontpit en in wiggies, gesny
2 geelperskes, ontpit en in stukkies gesny
½ spanspek, ontpit, geskil en in blokkies gesny
1 blik mango’s gedreineer en kleiner gesny
2 groen brandrissies, fyn gekap
25g vars koljanderblare, fyn gekap

SLAAISOUS:
30ml mayonnaise
60ml suurroom
sout en vars gemaalde swartpeper
15ml komynsaad, gerooster (opsioneel)

Metode
Meng die hoenderstukkies, vrugte, rissies en vars koljanderblare. Klits die mayonnaise en suurroom saam en klam die slaai liggies aan. Geur goed met sout en vars gemaalde peper en besprinkel met geroosterde komynsaad.

Bedien 6 mense.

Easy huevos rancheros

Ingredients
1 tbsp vegetable oil or sunflower oil
1 corn tortilla wrap
1 egg
200g can black beans, drained
juice ½ lime
½ ripe avocado , peeled and sliced
50g feta , crumbled
hot chilli sauce (we like sriracha)

Method
Heat the oil in a frying pan over a high heat. Add the tortilla and fry for 1-2 mins on each side until crisping at the edges. Transfer to a plate. Crack the egg into the pan and cook to your liking. Meanwhile, tip the beans into a bowl, season and add a squeeze of lime, then lightly mash with a fork. Spread the beans over the tortilla, top with the egg, avocado, feta and chilli sauce. Squeeze over a little more lime juice just before eating.

KOLWYNTJIES MET MAALVLEIS

Bestanddele Vleis
500g maalvleis
1ui (fyn gekap)
2 tamaties (fyn gesny)
5ml sout
12,5ml blatjang
12,5ml tamatie sous

Metode Vleis
Braai maalvleis in bietjie botter tot bruin. Voeg ui by en roer braai verder vir 2 tot 3 minute en voeg res van bestanddele by.

Bestanddele Deeg
250ml melk
125ml olie
2 eiers
250ml bruismeel
5ml aromat
2ml sout

METODE VIR DEEG:
Meng bogenoemde bestanddele tot glade deeg.

Metode Kolwyntjies
Smeer kolwyntjie pannetjies en skep 5ml deeg in pan dan 5ml maalvleis en druk effens in met lepel. Bak vir 15 minute in oond van 220*C. Indien kolwyntjie pannetjies groot is word 12,5ml in plaas van 5ml van elk gebruik.
