Metode
Voorverhit oond 180°C. Kook kool en aartappel skywe in bietjie soutwater vir 10 min, dreineer water af. Skep in jou oondbak. Braai uie tot deurskynend , gooi spek en worsies by, braai tot mooi bruin en sprei bo-oor koolmengsel. Maak “Potato Bake” aan met 1 koppie melk, giet oor koolmengsel sprinkel met swartpeper. Gooi lekker baie gerasperde kaas bo-oor. Bak in oond , ongeveer 30 Minute tot goudbruin.

BAKED AVOCADO BACON & EGG

INGREDIENTS
1 large avocado, cut in half and stone removed
2 eggs
2 strips bacon, cut into 1/2 inch pieces
salt and pepper to tasteDirections

Method
Scoop enough of the avocado out that it can fit the egg and fill them with the eggs. Bake in a preheated 180C oven for 15 minutes or until the egg is set the way you like it. Meanwhile cook the bacon and set aside on paper towels. Season the avocados with salt and pepper to taste, top with the bacon and enjoy with a spoon or on toast.

Tip:
To try to avoid the egg spilling out of a hole that is too small, crack the eggs into a bowl, spoon the yolks into the avocado halves and slowly add the whites, removing more of avocado if it looks like it needs more space.
Tip:
Bake in a baking dish that you can lean the edge of the avocado on to help prevent spilling.

Metode
Spuit n muffin pan met kleefwerende sproei. Sit die spek snye rondom die kante van die muffin pan. Breek ‘n eier en gooi in die pannetjie , sprinkel flippen lekka spice bo-oor. Bak dit teen 180 ° C vir 10 minute. Gebruik ‘n lepel om die mandjies te verwyder en te dien met roosterbrood.

 

Jalapeno Bacon Cheddar Soup ~ Banting

Ingredients
8 slices Bacon
4 medium Jalapeno Peppers, diced
4 Tbsp Butter
3 cups Chicken Broth
1 tsp Dried Thyme
1 tsp Garlic Powder
1 tsp Onion Powder
1/2 tsp Celery Seeds
1/2 tsp Cumin
3/4 cup Double Cream
230g Cheddar Cheese, grated
Salt and Pepper to taste

Method
Slice the bacon into 2,5cm slices and cook until crisp. Remove the bacon from the pan while reserving the fat. Dice the jalapenos (remove the seeds if you do not like the heat), and sautee in the bacon fat. Remove from the pan while reserving the fat. In a pot, add the bacon fat, broth, butter and spices. Bring to a boil and reduce heat to simmer for 15 minutes. Using a stick blender, emulsify the broth to incorporate the fats into it. Once done, add the cream and grated cheese. Stir together and season to taste. Add the jalapeno and bacon into the pot and let it simmer for 5 minutes before serving.

 

BUBBLE & SQUEAK WITH CHEESY TOAST

The kids will love their vegetables in these tasty patties served with a side of melted cheese toast.

Ingredients
3 medium washed potatoes, peeled and chopped
150g sweet potato, peeled and chopped
1 small carrot, peeled and chopped
1/4 cup frozen peas
1 tablespoon dried breadcrumbs
salt and cracked black pepper
4 slices wholemeal bread
low-fat cheese, grated

Step 1
Place the potatoes, sweet potato, carrots and peas in a steamer and steam until tender. Remove and place in a large heatproof bowl. Set aside for 5 minutes then mash roughly. Stir through breadcrumbs.

Step 2
When cool enough to touch, take 1/3 cup of the mixture and shape into rough rounds. Heat a little oil in a large non-stick frying pan over medium heat. Cook each cake for 2-3 minutes or until golden brown.

Step 3
As the bubble and squeak cakes are cooking, top the bread with grated cheese and toast in an oven grill until melted and golden. Serve with a couple of the bubble and squeak cakes.

Try cutting the bread into fun shapes using a pastry cutter before toasting. Try other vegetables like pumpkin, zucchini or broccoli flowerets

 

BROOD-EN-EIERGEREG

Metode
Pak ‘n laag brood in gesmeerde bak.  Sny ‘n paar skywe tamatie bo-oor, sprinkel sout, peper en ‘n laag kaas oor.  Pak nog ‘n laag brood en tamatie, plaas ‘n paar repies spek bo-op en strooi ‘n dik laag kaas oor.  Klits eiers en melk goed met sout en peper en gooi bo-oor.  Bak in matige oond tot eiers gaar is.

 

VARKVLEIS-EN-KAASSOUTTERT (6 porsies)

KORS: Enige deeg.

VULSEL: 500 g gemaalde varkvleis,
250 g gemaalde spekvleis,
1 1/2 k melk, 3 eiers, geskei,
2 k gerasperde kaas,
1 t mosterdpoeier,
1/8 t rooipeper,
1 e mielieblom.

Metode
Meng melk en eiergele. Voeg vleis, spek, kaas, mosterd en rooipeper by. Klits eierwitte styf en vou in mengsel. Voeg mielieblom net so droog by vulsel en giet in kors. Bak (170°C) vir 1 1/4 uur tot gaar.

Bestanddele
3 Middelslag aartappels geskil
4 koppies warm melk \ 2 koppies warm melk en twee koppies warm room
1 Ui, fyn gekap
3 Eetlepels Botter
2 Eetlepels Meelblom
1/2 Eetlepel Sout
1/2 Teelepel Peper
Knippie Rooipeper na smaak
1 Teelepel Fyngekapte Pietersielie

METODE
Kook die aartappels in die skil tot gaar. Maak die aartappels fyn, en voeg die warm melk by. Hou warm.
Braai die ui `n rukkie in die botter en roer dan die meelblom daarby. Wanneer glad, voeg by die aartappelmengsel en laat saggies kook totdat dit glad is. Roer af en toe.
Geur deeglik, en dis warm op met die pieterselie daaroor gesprinkel.

*Jy kan ook ‘n klein pakkie ertjies by sit.* Kook dit eers tot sag, en voeg by aartappelsop. 

 

 

Lean Diced Bacon, Seafood & Avocado Salad (4-6 servings)

125 g Eskort Lean Diced
Bacon
3 Ripe Avocados
4 Leaves of Lettuce
200 g Crab Sticks or
Cooked Shrimps
75 g Croutons
125 ml Caesar Salad
Dressing

Method
Fry the Eskort Lean Diced Bacon until crispy before setting aside. Halve the avocados; remove seed, peel and slice. Arrange on the plate with the lettuce, avocado, seafood and croutons. Sprinkle salad with crispy Eskort Lean Diced Bacon and drizzle with salad dressing. Delicious

 

SPEK- BOONTJIE EN MAALVLEISETE

250g maer spek stukkies (bacon bits) 
300g maer maalvleis 
beesaftrekselpoeier 
500g McCain Green Beans, Potato & Onion 
1 x 410g blik tamatie- en uiemengsel 
geurmiddels: brandrissiesous, 
fyngekapte knoff en 
gemaalde swart peper 
45ml grofgekapte pietersielie 

Plaas spek en maalvleis in ‘n kastrol en roer oor matige hitte tot lekker bruin. 
Geur liggies met aftrekselpoeier. 
Voeg McCain boontjiemengsel en tamatiemengsel by. 
Geur na smaak en prut ongeveer 15 minute, of tot gaar genoeg na jou sin. 
Vurk pietersielie deur en bedien met pasta en ‘n slaai.
