Bestanddele
2 eiers                                                                          
125ml suiker
250ml melk
25ml gesmelte margarien of olie
500ml meelblom
20ml bakpoeier
2.5ml sout

Metode
Klits die eiers en suiker saam.  Voeg 125ml melk en margarien by. Sif die meelblom, bakpoeier en die sout saam en voeg dit by die eiermengsel. Voeg die orige melk geleidelik by om ‘n gladde mengsel te vorm. Moet die mengsel nie weer roer nadat alles goed gemeng is nie. Bak in ‘n warm pan waarin bietjie olie gedrup is. Bak eers aan die een kant en as dit bo-op lugblasies vorm, draai die koekies om en bak ook aan die anderkant tot goudbruin.  Dien op met botter en stroop of heuning.

Crumpets

Ingredients
750 ml (3 C) cake flour
25 ml (2 e) melted butter
15 ml (3 t) baking powder
12,5 ml (1 e) golden syrup heap full
5 ml (1 t) salt
375 ml (1½ C) water
125 ml (½ k) sugar
3 eggs

Method
Beat eggs in water, add sugar and syrup. Add sifted dry Ingredients. Lastly add melted butter. Must look like cream.
Spoon mixture onto a Girdle butter hot plate or pan. When bubbles form the turn and bake. Be careful pan not too hot.
Serve with Butter, syrup and cream.

 

Crumpets – 10-12 (20-24)

1 c cake flour (2)                          
15 ml castor sugar (30 ml)
7 ml baking powder (14 ml)            
1 large egg  (2)
250 ml milk (500 ml)                       
pinch of salt (larger pinch)
1.        Sift flour, sugar, salt and baking powder into a bowl.
2.       Add the egg & half the milk, beat until smooth.
3.       Add remaining milk & beat again until bubbles form on the surface.
4.       Pre-heat a frying pan & coat very lightly with oil.
5.       Drop tablespoonful of batter onto hot pan & cook until golden brown on underside.
6.       When bubbles form on the surface turn the crumpets & cook a further ½ to 1 minute on the other side, until golden brown.
7.       Keep warm while the others cook.
8.       Serve with jam, honey, syrup, butter & whipped cream.
