MILLIONAIRE’S DATE PUDDING

(Serve 6 – 8)

Ingredients
100 g pitted dates, chopped,
125 ml water,
2 1/2 ml bicarbonate of soda,
30 ml butter or margarine,
100 ml castor sugar,
1 egg,
1 ml vanilla essence,
150 ml self-raising flour,
5 ml baking powder,
1 ml salt.

TOPPING:
90 ml brown sugar,
1 ml vanilla essence,
40 ml butter or margarine,
100 ml cream.

Method
In a bowl, combine the dates, water and bicarbonate of soda. Microwave on 100% power for about 2 minutes. Set aside. In a bowl, cream the butter and castor sugar until light and creamy. Beat in the egg together with the vanilla essence. Fold in the flour, baking powder, salt and the dates. Spoon into a well greased microwave dish and microwave on 70% power until firm to the touch, about 7 – 9 minutes.

TOPPING:
Combine the topping ingredients and heat, stirring to dissolve the sugar. Pour some of the topping over dish and serve the remainder in a sauce boat.

Dadel Vierkante

1 l (4 x 250 ml) suiker
187 ml (3/4 k) melk
125 g (½ blok) botter
250 g (1 pakkie) dadels, fyn gekap
250 ml (1 k) klapper
60 ml (4 e) gouestroop
knypie sout
5 ml (1 t) vanielje
1 eier
625 ml (2½ k) pofrys (Rice Krispies)
500 ml (2 k) ekstra klapper
1. Plaas suiker, melk, botter en dadels in kastrol. Verhit tot kookpunt en roer gereeld.
2. Laat 10 min. kook. Roer dikwels.
3. Roer klapper, gouestroop, sout en vanielje by. Laat nog 5 min kook.
4. Verwyder kastrol van hitte en roer eier vinnig by. Roer pofrys by.
5. Druk mengsel in gesmeerde bak vas.
6. Plaas in yskas om te stol en sny in blokkies.
7. Rol blokkies in klapper en verpak soos verkies.

Dadel-en-Koffie-Muffins

Bestanddele
2 eetlepels (30ml) koffiepoeier
1 pakkie (250g) dadels, gekap
½ koppie (125ml) kookwater
6 eetlepels (90ml) olie
½ koppie (125ml) karringmelk
¾ koppie (187ml) bruinsuiker
2 eiers
2 koppies (500ml) koekmeel
½ teelepel (2,5ml) fyn kaneel
1 eetlepel (15ml) bakpoeier
knypie sout

Stel oond op 180 ºC.

Metode
Meng koffie, dadels en kookwater en laat staan eenkant vir 10 minute. Klits olie, karringmelk, suiker en eiers tot goed gemeng. Sif koekmeel, kaneel, bakpoeier en sout saam. Roer meelmengsel by eiermengsel en roer dadelmengsel by om mengsel klam te maak. Roer goed en skep in gesmeerde muffinpannetjie tot 2/3 vol. Bak 20 minute of tot gaar.

Grondboontjie- en dadelkoekies

Bestanddele

Maak: omtrent 40
Bereidingstyd: 30 minute plus afkoeltyd
Baktyd: 12-15 minute
Oondtemperatuur: 180 °C

5 ml gerasperde lemoenskil
80 ml (60 g) sultanas
80 ml (60 g) pitlose dadels, grofgekap
140 ml (60 g) grondboontjies, grofgekap
135 ml (125 g) botter
100 ml (90 g) strooisuiker
1 groot eier
230 ml (125 g) bruismeel
250 ml graanvlokkies, fyngedruk

Metode

1 Meng die lemoenskil, vrugte en neute in ‘n mengbak saam.

2 Klop die botter en suiker in ‘n aparte bak saam tot romerig. Voeg die eier by en klop goed. Vou die meel in en roer dan die vrugte en neutemengsel by. Sit die bak vir 30 minute in die yskas.

3 Rol die mengsel in klein bolletjies en rol elkeen dan in die fyngedrukte graanvlokkies.
Pak die koekies op gesmeerde bakplate en bak dit vir 12 tot 15 minute of tot goudbruin

Orange & Date Cake.

 
Cake:
5 ml bicarb of soda                        
600 g cake flour
100 ml hot water                            
200 g castor sugar
250 g dates, chopped up                 
8 ml baking powder
½ c mixed peel                                
3 ml salt
2 unbeaten eggs                             
100 g softened butter
150 ml fresh orange juice              
50 g chopped walnuts or peacans
50 ml orange rind                          
250 ml sour milk, or normal
Crystallised orange peel                 
milk soured with lemon juice
Sauce:
½  c sugar                                     
½ c orange juice
75 ml lemon juice
1.        Preheat oven to 190*C (375*F).
2.       Grease & flour a 25cm tube baking tin.
3.       Dilute bicarb in hot water & pour over chopped dates, stir well, set aside to cool.
4.       Take a little flour & mix with the ½ c mixed peel to loosen.
5.       Add the chopped nuts to the loosened mixed peel. Mix.
6.       Sift all the dry ingredients into a large mixing bowl.
7.       Mix the softened butter into the dry ingredients with your finger tips.
8.       Add the soured milk & orange juice to the crumb mixture, mix well.
9.       Add the eggs, mix till combined.
10.    Add the softened dates, nuts/mixed peel & orange rind. Mix well.
11.     Pour into tube tin and bake for 35-50 minutes, till baked.
12.    Sauce: Combine all sauce ingredients in a saucepan, warm to dissolve sugar, DO NOT ALLOW TO BOIL.
13.    Pour sauce over the hot cake, when removed from the oven.
14.    Allow the cake to cool in the tin & then turn out on wire wrack.

15.    Decorate (when cooled) with drip icing & crystallised orange peel.

Date or Raisin Loaf – makes 2 loaves

500 g dates, cut up                   
10 ml bicarb of soda     
       or                              
250 g raisins &                                    
250 g cake mix 
250 ml milk
1 ½ c sugar 
500 ml boiling water                                
4 c cake flour
10 ml baking powder                
2 ½ ml ginger
5 ml cinnamon                          
5 ml allspice
2 ½ ml salt                               
4 eggs, well beaten
1.        Put the chopped dates or raisin/cake mix in a large bowl, add the bicard & butter.
2.        Pour boiling water over the mixture. Mix till butter dissolves – allow to cool.
3.       Pre-heat oven to 180*C (350*F).
4.       Grease2 loaf tins well & paper with baking paper.
5.       Sift all the dry ingredients, expect the sugar.
6.       Add the sugar to the date/raisins mixture. Mix well.
7.       Beat the eggs in the milk.
8.       Add the egg mixture to the date/raisin mixture, mix well.
9.       Add the four mixture, mix well.
10.    Pour into the greased loaf tins.
11.     Bake for 1 to 1 ½ hours.

Dadelwieletjies

Betsanddele Vulsel
1 pakkie (250g) dadels, gekap
½ koppie (125ml) rosyntjies
150ml water
1 eetlepel (15ml) brandewyn
1 pakkie (100g) gevlokte amandels, gekap

Bestanddele Deeg
2 koppies (500ml) koekmeel
1 teelepel (5ml) koeksoda
2 teelepels (10ml) kremetart
½ teelepel (2,5ml) kaneel
knypie sout
knypie gemengde speserye
¾ koppie (187ml) strooisuiker
½ koppie (125ml) olie
1 koppie (250ml) water
Stel oond op 180 ºC.

Metode Vulsel
Kook dadels en rosyntjies in water vir 2 minute in mikrogolfoond. Roer brandewyn en amandels by en laat eenkant om af te koel.

Metode Deeg
Sif al die bestanddele behalwe suiker, olie en water saam. Roer suiker by gesifte bestanddele. Roer olie en water bymekaar en roer by gesifte bestanddele. Vorm deeg en rol tot redelik dun op ‘n meelbestrooide oppervlak in reghoek van ongeveer 50 cm x 30 cm uit. Smeer vulsel op uitgerolde deeg en rol in breedte op soos ‘n rolkoek. Draai deegrol toe met kleefplastiek en plaas in yskas vir 5 ure. Sny deeg in 1 cm- skyfies, plaas op gesmeerde bakplaat en bak vir 12 minute of tot goudbruin. Lewer ongeveer 60 koekies
