Nachos Met maalvleis

Bestanddele
500g maalvleis, gaargemaak met knoffel en speserye
1 ui, fyngekap
2 groen soetrissies, fyngekap
2 geel soetrissies, fyngekap
1 teelepel fyn rou knoffel
1 tamatie, fyngekap
1 pak nachos
150g gerasperde Cheddarkaas
150g gerasperde Mozzarellakaas
blaarslaai, fyngekap
250ml suurroom
1 avokado, in blokkies gesny

Metode
Voorverhit die oond tot 180 grade. Plaas die gaar maalvleis in ‘n piramidehoop in die middel van ‘n ronde oondbak. Pak die nachos om die maalvleis. Sprinkel al die rou groente (behalwe die blaarslaai) oor die maalvleis. Gooi die kaas oor die groente en die nachos. Plaas in die oond tot die kaas gesmelt het.
Haal uit die oond en strooi die avokado en blaarslaai oor, en dan die suurroom.

Nachos Souse

Ingredients

Beans
1 Tin Baked Beans
1 Onion – chopped
1 Tomato – chopped
Salt to taste
½ tsp Red Chilli Powder
¼ tsp Cummin Powder
¼ tsp Corriander Powder
1 tsp Ginger garlic paste
1/8 tsp Tumeric Powder
¼ tsp Mother-in-Law Spice
¼ tsp whole cummin seeds
Oil

2. Guacamole
4 Avos
1 Tomato – diced
¼ cup onion – chopped
1 chilli – diced
¼ cup sour cream
1/8 cup coriander leaves
1 Tablespoon lime juice
Salt & pepper to taste

3. Salsa
2 cups tomato – diced
Chopped coriander leaves
6 cloves fresh garlic – chopped
½ onion chopped
1 jalapeno/chilli chopped
½ tsp salt
1 Tablespoon lime juice

4. Other
1 Big packet Doritos Sweet Chilli Chips
1 Sour cream

Method

Beans
a. Heat pot, add whole cumin seeds and brown slightly
b. Add oil and onion and stir fry until onions are slightly brown
c. Add tomato and all spices and cook for 5 minutes
d. Add beans and cook through

2. Guacamole
a. Mash 2 of the avos with the back of a fork
b. Add in chilli, onion and coriander
c. Fold in cream and lime juice
d. Add salt and pepper to taste
e. Dice the remaining avo into cubes
f. Fold in diced avo and tomato into the mashed avo mix
g. Keep chilled

3. Salsa
a. Mix all the ingredients together
b. Keep chilled

4. Other
a. Line the bottom of a pyrex dish with chips
b. Layer beans mixture over chips
c. Layer salsa mixture over beans
d. Add dollops of guacamole and sour cream
e. Can be chilled and served as a salad or serve with a warm beans mixture as a light meal
f. For a light meal, add grated cheese over beans mix and melt. Add rest as above

 

CHEESY MINCE NACHOS

INGREDIENTS
Wholegrain nacho chips
Prepared mince: Extra lean mince browned in a pan with some olive oil, then add a tin of Mexican salsa and garlic salt. Stir for 5minutes and let it cool.
Bowl of guacamole: Mashed avocado mixed with finely chopped onions + tomatoes, with added salt and black pepper to taste.
Grated cheddar cheese

METHOD
1. Preheat oven to 180ºC.
2. Place ingredients evenly on a plate in layers, starting with nacho chips, then the mince and topped off with a generous helping of cheese.
3. Bake in oven until the cheese is melted.
4. Enjoy with guacamole, you can add a bowl of sour cream to the recipe as well, but I just make loads of guacamole instead
